Making and grinding fresh spices gives a more robust, longer lasting, fresher, cleaner taste.

Preparation time: 5-10 minutes   Quantity: Makes a 40g batch or so  

Ingredients

1/2 tablespoon cinnamon from stick
1/2 tablespoon fennel seeds
1/2 tablespoon star anise
1/2 tablespoon Szechwan pepper
1/2 tablespoon cloves

Method

  • Grind all ingredients in a pestle and morter, till well powdered and blended or mix in a coffee grinder or small whizzer
  • Keep in an sealed jar
  • Will keep fresh flavoured for a few months or so
