Chocolate Ganache / Topping

Chocolate ganache is the traditional topping for chocolate cakes, muffins and buns. It easily spreads with a clean warm palate knife and keeps in the fridge for several days.

Preparation time: 5 minutes   Quantity: 100g mix - enough to coat 12 small buns   Cooking time: 10 minutes

Ingredients

100 g / 4 oz dark chocolate
50 ml / 4 tablespoons double or whipping cream
1/2 teaspoon vanilla essence

Method

  • Melt the chocolate over a bain marie
  • Remove from the heat
  • Whisk in the cream and vanilla until frothy and smooth
  • Allow to cool a little
  • Use to spread on cakes or serve with pancakes.
