An chilli hot relish to accompany Mexican food or puree for a hot sauce or marinade for B.B.Q meats or serve a little on the side with char-grilled seafood's.

Preparation time: 10 minutes   Quantity: Makes a large jar   Cooking time: 1 hour

Ingredients

10 whole smoked red chillies (chipotle / jalapeno) - quartered
1 onion - small diced
2 cloves garlic - sliced or crushed roughly
5 tablespoons white wine vinegar (or cider)
4 tablespoons fresh tomato sauce or chopped tinned tomatoes
1/2 teaspoon ground cumin
1/2 tablespoon fresh oregano or 1/4 dried
seasoning
1 & 1/2 pints / 850 ml water

Method

  • Place all the ingredients in a thick bottomed pan
  • Bring to the boil and then reduce to a heavy simmer
  • Cook for an hour, until the chillies are soft and the liquid has reduced by half
  • Store in a sterilized jar for a relish or
  • Process until smooth for a sauce
