Chocolate and Guinness Cake
This cake is beautiful served warm with cream or whipped up cream with baileys or vanilla ice cream. It will keep for a week wrapped up. It also freezes very well.
Preparation time: 15 - 20 minutes Quantity: Makes 10 - 12 portions Cooking time: 1&1/4 hours or so
Ingredients
120g /4 oz soft butter
225g/ 6 oz soft brown sugar
2 x eggs
120g/ 4 oz plain flour
½ teaspoon baking powder
½ teaspoon baking soda
220 ml/ 7 fl oz Guinness (small tin)
50g/ 2 oz cocoa
50g/ 2 oz dark chopped chocolate
– 1 x large high tin approx. 7- 8 inch
Method
- Beat sugar and butter until creamy
- Add eggs slowly - mixing well
- Mix in flour
- Mix in the rest of the dry ingredients
- Whisk together the Guinness and cocoa and beat in to the cake mix
- Pour in the greased tin and bake for 1&1/4 hour or until firm in the middle

Recommended cake tin- approx. size 8 - 9 inch
