Double Chocolate Rum and Raisin Brownies
Preparation time: 20 minutes Quantity: Serves 10 - 12 Cooking time: 40 minutes
Ingredients
100g /4 oz raisins
2-3 tablespoons dark Rum
180g/ 6 oz butter- softened
300g/ 10 oz / 2 bars dark chocolate
300g/ 10 oz caster sugar
3 large eggs
60g/ 2 oz white chocolate chips or chopped
100g/ 4 oz plain flour-sifted
1 tablespoon cocoa powder
Method
- Soak the raisins in the rum -set aside
- Melt the butter and the chopped chocolate over a bain marie (in a bowl over simmering water)
- Stir when melted
- Meanwhile whisk the eggs and the sugar together till frothy and paler
- Whisk the two together
- Stir in the rum and raisins and white chocolate chips
- Fold in the flour and cocoa
- Spoon in to a greased tray
- Bake in a preheated oven gas 6/200*c on the middle shelf for 30-40 minutes or till cooked
Recommended cake tin- approx. size 9 – 10 inch
