Chocolate Pecan Brownies

You can omit the nuts or replace with another, or make coconut brownies or chocolate chip brownies, just replace weight for weight - ideas are endless - actually before I forget Rum and Raisin, add 2 tablespoons of dark rum to the melted chocolate and replace the pecans for 150g of rum soaked raisins - Phoor!!!

Preparation time: 20 minutes   Quantity: Served 10 - 12   Cooking time: 40 minutes

Ingredients

180g/ 6 z butter- softened
300g/ 10 oz / 2 bars dark chocolate
300g/ 10 oz caster sugar
3 large eggs
100g/ 4 oz plain flour-sifted
300g/ 10 oz pecans-roughly chopped/broken

Method

  • Melt the butter and the chopped chocolate over a bain marie (in a bowl over simmering water)
  • Stir when melted
  • Meanwhile whisk the eggs and the sugar together till frothy and paler
  • Whisk the two together
  • Fold in the flour and broken nuts
  • Spoon in to a greased tray
  • Bake in a preheated oven gas 6/200*c on the middle shelf for 30-40 minutes or till cooked


Recommended tray bake tin 8 inch square or equivilent- ish
