This is a basic Swiss roll mix, you can flavour with anything light and fill with an assortment of flavours and ingredients.
Like - cream cheese, creme fraiche, mascapone, whipped cream, ricotta, Greek yogurt - with added sweetness and fruits etc.

Preparation time: 15 minutes   Quantity: Serves 6-8   Cooking time: 15 minutes

Ingredients

4 whole large eggs
120g/ 4 oz caster sugar
90g/ 3 oz plain flour- sifted twice

Method

  • Whisk the eggs and sugar, really, really well, till frothy, lighter and pale
  • Gently stir in the flour in a figure of eight, trying not to loose the air from the egg mix
  • Spoon in to a lightly greased flat tin lined with greased -greaseproof paper
  • Bake in a preheated oven, middle shelf gas 6/200*c/400*f for 15-20 minutes or until, firm and cooked
  • Leave to cool slightly
  • Roll length wise, so it cools in a roll shape
  • When completely cool
  • Unroll and fill with your choice of filling -then re-roll
