Banana, Rum and Raisin Loaf

This is a delicious loaf on its own but nice spread with butter. Works well every-time.

Preparation time: 15 minutes   Quantity: Makes 12 portions   Cooking time: 1 hour

Ingredients

70g/ 2 ½ oz soft butter
130g/ 5 oz sugar
1 teaspoon bicarbonate of soda
1 teaspoon baking powder
280g/ 10 oz plain flour
220g/ 8 oz raisins soaked in rum
1 large banana - sliced

Method

  • Cream together butter and sugar
  • Then add dry ingredients
  • Mix in rum, raisins and banana
  • Cook 1 hour in a loaf tin Gas 3-4/ 180c


Recommended cake tin- approximate size, 2lb loaf tin or 7 - 8 inch tin
