Fresh Blueberry and Orange Polenta Cake

A No Butter Cake.
Try replacing the blueberry’s for other berries, blackberries work well and the orange for other citrus fruits.

Preparation time: 20 minutes   Quantity: Serves 8-10   Cooking time: 1 hour

Ingredients

180g/ 6 oz caster sugar
2 medium whole eggs
2 fresh oranges - zest and juice
120g/ 4 oz polenta
120g /4 oz plain flour or gluten free flour -sieved
2 level teaspoons baking powder
200 ml any yogurt
3 medium egg whites
180g/ 6 oz fresh blueberries

Method

  • Whisk the sugar and whole egg with the orange zest - together till paler, frothy and airy
  • Stir in the polenta and flour
  • Stir in the yogurt and juice
  • Meanwhile whip the whites till stiff
  • Fold in to the cake mix
  • Pour in to a cake tin and sprinkle the blueberries all over the top
  • Bake in a preheated oven gas 4/180*c for

50-60 minutes or until cooked

Recommended cake tin- approx. size 8 inch
