Butter Biscuits
A delicately crisp buttery biscuit, perfect served with ice-cream or filled with creamy icing and served with a good cup of char.
Preparation time: 20 minutes Quantity: Makes approx. 20 biscuits Cooking time: 13 - 15 minutes
Ingredients
225g / 9 oz salted butter - softened
125g / 5 oz plain flour - sieved
100g / 4 oz caster sugar
1 egg - medium
few drops vanilla extract
1 - 2 teaspoons water or milk
Method
- Rub the butter into the flour
- Mix in the sugar, egg and vanilla by hand to form a soft dough
- If too dry add the water - only if needed
- Rest wrapped in the fridge for minimum 20 minutes
- Roll and cut out shapes or roll in a sausage shape and cut of 1 inch slices or press through a cookie press
- Place on a greased tray
- Bake in a preheated oven gas 4 / 180*c / 350*f - for 14 minutes or until crisp and golden
