Coconut Cake with Lime Icing
Preparation time: 15 Minutes Quantity: Serves 8 Cooking time: 35 - 45 minutes
Ingredients
40g/1 ½ oz desiccated coconut
120g/4oz plain flour sieved
6 medium eggs
150g/ 5oz sugar
1/2 zest of a lime
juice of ½ lime
Icing –125g/ 4 oz soft butter
150g /5 oz icing sugar
1 tablespoon lime zest and ½ the juice
Method
- Sift flour and stir in the coconut- leave aside
- Whisk the eggs over a pan of simmering water in a bowl (Bain Marie)
- Add sugar slowly until doubled in size
- Remove from heat
- Add zest and juice, then fold in dry mix
- Pour in to a greased tin
- Put on a medium shelf in a pre heated oven
- Bake for 35 –45 minutes. Gas 4/180c/380*f.

- For the icing -Beat together all the ingredients and cover cake
- Sprinkle with coconut (toasted coconut is nicer)
Recommended cake tin- approx. size 6 inch
