A poor mans Caviar and in my opinion a lot tastier, sorry the real McCoy is not for everyone. Serve this recipe with toasted flat bread or warm fresh granary bread and butter

Ingredients

To make the Aubergine Caviar you will need the following ingredients:
1 Aubergine
2 plum tomatoes - skinned and chopped
1 tablespoon olive oil
1 onion - finely chopped
1 clove garlic - crushed
4 tablespoons water or white wine
Seasoning

Methods

  1. To make Aubergine Caviar
    • Cut the aubergines in half length wise
    • Grill the black side for 5 minutes till charred
    • Peel of the skin
    • Chop the aubergine flesh in to small pieces
    • Heat the oil in a pan
    • Gently fry off the onion cooking until soft but without colour
    • Add the garlic and aubergine
    • Cook for approx. 5 minutes until soft
    • Add the tomatoes and water
    • Cook until all the water has absorbed, the mix is soft and paste like
    • Season to taste
    • Cool and serve
