For this Whole Roasted Garlic  Recipe -Serve a whole bulb per person as a starter with some good crusty bread. Squeeze the garlic puree from each clove on to the bread and enjoy the slow roast taste - well cooked garlic shouldn’t make your breath smell !!! it’s only raw garlic that does that. This also works well on the B.B.Q cooked slowly on the embers.

Ingredients

For Whole Roasted Garlic Recipe you will need the following ingredients:
Per person - multiply as needed 1 whole garlic head/ bulb
1 tablespoon olive oil sprig fresh thyme or pinch dried
A pinch of sea salt
A few twists of pepper

Methods

  1. To make the Whole Roasted Garlic Recipe:
    • Cut the very top of the garlic, so just a little of each clove is revealed
    • Place the bulb in a square of tin foil
    • Drizzle on the oil
    • Add the sprig of thyme and season
    • Fold over the foil to completely cover the bulb
    • Roast in a preheated oven gas 6 - 7 / 210 - 230*c for 30 minutes
    • Fold the tin foil back a little to let the heat get in and allow the top to get brown and place back in the oven for a further 10 minutes
    • Serve with fresh bread
