Ingredients

To make this Eggs Baked in Tomato Sauce with coriander Recipe you will need the following ingredients:
Tomato Sauce -
1 tin plum tomatoes
1 tin water
1 chopped onion
2 cloves garlic
1 stick celery
1/2 chopped red chilli (optional)
Seasoning- 
2 tablespoons tomato puree
4 large eggs black pepper
1 tablespoon coriander - chopped

Methods

    • To make this Eggs Baked in Tomato Sauce with coriander Recipe
    • Place all ingredients for the tomato sauce in a big pan and simmer for 30 - 40 minutes
    • Liquidize / blend till smooth
    • Spoon 1/2 - 2/3 of the mix in an oven proof dish
    • Crack 4 eggs on the top
    • Bake in a preheated oven gas 6 /200*c for 15 -30 minutes until the eggs are how you like them
    • Grind on some pepper and sprinkle with coriander
