Ingredients

To make this Asparagus and Pea Frittata you will need the following ingredients:
1 tablespoon olive oil
1/2 red onion - sliced
1 clove garlic - crushed
3 asparagus - trimmed and cut in fours
2 large eggs - lightly beaten
1 tablespoons milk
small handfull / 20g peas - fresh or defrosted
1 oz / 30g any cheese - grated

Methods

  1. To make Asparagus and Pea Frittata
    • In a omelette pan or small frying pan, heat up the oil
    • Add the onions, garlic and asparagus
    • Sauté until soft but without colour
    • Add the eggs and milk– stir round gently on high for a few minutes then turn down the heat
    • Sprinkle on the peas and cheese
    • Either grill for a few minutes until just cooked or place in the oven for 4-5 minutes on high until set
    • Cool slightly before serving – can be eaten chilled
