Ingredients

To make this Carrot and Apple Soup Recipe you will need the following ingredients:
1 tablespoon olive oil or 30g /1 oz butter
1 onion - diced
1 clove garlic - crushed (optional)
1/2 teaspoon ground cumin 450g / 1 lb carrots - peeled and sliced
1 apple - slightly tart - peeled and chopped
2 pints stock or 1 cube and 2 pints hot water

Methods

    • To make this Carrot and Apple Soup Recipe
    • Heat the oil or butter in a large pan-fry of the onions gently to soften
    • Add the garlic and cumin and cook for 1/2 minute to boost flavour
    • Add the carrots and apple stir round for 1/2 minute
    • Pour over the stock
    • Bring to the boil then;
    • Simmer for 30 minutes or until the carrots are tender / soft .
    • Blend / liquidize / puree till smooth
    • Taste and season to taste
    • Serve
