Ingredients

To make this Penne Pasta in Tomato Sauce Recipe you will need the following ingredients:
Tomato Sauce -
1 tin plum tomato
1 tin of water
1 onion - peeled and chopped
1 stick celery - chopped
2 cloves garlic - sliced
2 carrots - peeled and chopped
1 red pepper - chopped
¼ tub tomato puree (3 tablespoons)
Salt and pepper
1 tablespoon fresh herbs - chopped
Pasta -
12 oz / 300g penne pasta
2 teaspoons olive oil
A touch of salt
Grated cheese to serve (optional)

Methods

  1. To make this Penne Pasta in Tomato Sauce Recipe:
    • Make the tomato Sauce - . Put all ingredients a large pot except the puree and simmer for 30 minutes until all soft . Blend or liquidize . Add the puree, this will add colour, thickness and shine . Taste and season
    • Meanwhile bring a big pan of cold water to the boil with the oil and salt
    • When rapidly boiling add the pasta, stir a couple of times and cook as per instructions (minus a minute) on the back approx. 8 - 10 minutes
    • Drain stir in to the tomato sauce
    • Serve with a sprinkle of grated cheese (op)
