Ingredients

To make this Lemon and Sultana Baked Cheesecake Recipe you will need the following ingredients:
For the Base -
12 digestive biscuits-crushed
90g/ 3 oz butter
1 lemon zest
1 tablespoon lemon juice
For the Filling -
230g/ 8 oz cream cheese
2 tablespoon caster sugar
5 tablespoons cream -double or whipping
1 large egg
1 large egg yolk
1 teaspoon vanilla extract
2 lemon zest and juice

Methods

    • To make this Lemon and Sultana Baked Cheesecake Recipe
    • Melt the butter and add the crushed biscuits, juice and zest
    • Stir till well coated with the butter
    • Push the crumbs down firmly, in to a greased spring bottom tin
    • Beat the cream cheese with the sugar
    • Beat in everything else
    • Spoon in to the biscuit base
    • Bake in a preheated oven for gas 6/200*c for 30-40 minutes or until set in the middle
