Ingredients

To make this Guacamole Cheesy Toast Recipe you need
Guacamole -
2 ripe avocado
1 small onion
1 small tomato
1/4 fresh red chilli (optional)
1 tablespoon fresh coriander
1/2 fresh lime juice
1 tablespoon olive oil
seasoning
2 slices thick bread
60g /2 oz grated cheese

Methods

    • To make this Guacamole Cheesy Toast Recipe
    • To make the Guacamole -
    • Cut the avocados in half, remove the stone
    • Place in a bowl and squash with a fork -till half mashed, with a few larger pieces of avocado
    • Finely chop the onion and tomato -add
    • Finely chop the chilli - add
    • Chop the coriander - add
    • Mix in the lime and oil
    • Season to taste
    • Meanwhile toast the bread
    • Spread equally and evenly with the guacamole, covering the crusts so they don’t burn
    • Top with the grated cheese
    • Toast under a grill till the cheese is melted and golden
