Summary:

This Banana, Chocolate Fudge Cake is the only Fudge Cake recipe you’ll ever need. Variations – Omit the banana for a Plain Chocolate fudge Cake or omit the banana and add 3 oz /75g of chocolate chips for a fudge chip cake or add 4 oz/100g of chopped pre soaked figs in rum for a sticky fudge fig cake. Or make in muffin tins for individual fudge cakes – cook for less time though

Ingredients

To make Banana, Chocolate Fudge Cake you will need the following ingredients:
150g / 6 oz butter –softened
400g / 16 oz dark brown sugar
3 eggs
300g / 12 oz self-raising flour
6 tablespoons cocoa
1-teaspoon bicarbonate of soda
2 teaspoons vanilla essence
12 fl oz water
6 fl oz vegetable oil
6 fl oz milk
2 large ripe bananas / chunky dice
Cake tin size –10-12 inch wide / high round

Methods

  1. To make Banana, Chocolate Fudge Cake
    • Simply beat up everything together until well mixed and smooth – adding the bananas last so they hold a little shape
    • Bake in a preheated oven gas 6/200*c on a middle shelf for 1&1/4 hours or so – until a skewer or knife comes out clean
  2. Tips -
    • If using an electric mixer beware the mix doesn’t slop over the side, maybe pour in the oil and milk last
    • If mixing by hand add everything and beat or for a slower more organized method – mix/beat the butter and sugar together first then add the eggs slowly with a little flour to stop splitting, add the remaining flour and then whisk or beat in everything else – bananas last to hold a little shape
