Ingredients

To make this Date and Carrot Loaf Recipe you will need the following ingredients:
50g / 2 oz butter 3 eggs - large
100g/ 4 oz light brown sugar
75 ml / 3 fl oz vegetable oil
3 tablespoons milk
1 lemon zest (optional)
2 orange zest
100g/ 4 oz dates -chopped
200g/ 8 oz carrots -grated
180g/ 7 oz self raising flour
1 teaspoon baking powder
1 level teaspoon cinnamon
A pinch of nutmeg

Methods

    • To make this Date and Carrot Loaf Recipe
    • Melt the butter
    • Mix the butter with the eggs, sugar, oil and milk
    • Mix in the zest , dates and grated carrots
    • Sift in the flour, baking powder and spice
    • Mix in lightly, till just mixed
    • Spoon in to a 2lb greased loaf tin
    • Bake in a preheated oven gas 6/180*c for 35-40 minutes or until cooked in the middle
