Ingredients

To make this Red Onion and Tamarind Soup Recipe you will need the following ingredients:
1 tablespoon olive oil
300g/ 10 oz red onions -peeled and sliced
1 clove garlic -crushed
1 tablespoon red wine vinegar
1 teaspoon brown sugar
1&1/2 pints/ 850 ml veggie stock (or 1 pint stock & 1/2 pint red wine)
1/2 teaspoon tamarind paste

Methods

  1. To make this Red Onion and Tamarind Soup Recipe:
    • Heat the oil
    • Sauté the onions gently for several minutes to soften
    • Add the garlic, vinegar and sugar and cook till light golden brown, stirring frequently
    • Add the stock (and wine) bring to the boil then simmer for 10 minutes
    • Stir in the tamarind paste and season
    • Boil for 1-2 minutes
    • Serve
