Ingredients

To make this Potato, Parmasan and Spring Onion Cakes Recipe you will need the following ingredients:
600g/ 20 oz potatoes
1 egg yolk
60g/ 2 oz parmesan- grated
4 spring onions -finely sliced
Seasoning
3-4 tablespoons plain flour
Oil for frying

Methods

  1. To make this Potato, Parmasan and Spring Onion Cakes Recipe:
    • Peel the potatoes, half and steam or boil till just under cooked, still a little firm in the middle (steam approx. 6-8 minutes / boil approx. 10-12 minutes)
    • Cool by pouring over cold water
    • Grate in to a bowl
    • Add the parmesan, spring onions and season to taste
    • With damp hands fold in to 12 balls and flatten each one
    • Dip in to the flour
    • Heat up some oil in a frying pan and sauté 2-3 minutes on each side till golden
