The Turkish dish of Mucver (pronounced moo-j-vear) is one of my favorites and its so easy to make. Serve this Mucver - Courgette and Feta Cakes Recipe with roasted new potatoes tossed in sea salt and olive oil and roasted for 30-40 minutes and a light salad.

Ingredients

To make this Mucver - Courgette and Feta Cakes Recipe you will need the following ingredients:
2 courgettes -medium
1 carrot -medium
1 block feta cheese
2 eggs- medium
2 tablespoons plain flour
1 tablespoon chopped parsley
1 teaspoon fresh dill- chopped
touch chilli powder
1/2 teaspoon ground cumin
A touch of dried thyme
Olive oil to fry

Methods

    • To make this Mucver - Courgette and Feta Cakes Recipe
    • Grate the peeled carrot and grate
    • Top and tail the courgettes and grate . Crumble the feta cheese
    • Mix everything together
    • Heat up a pan with 3-4 tablespoons olive oil
    • Fry a hand full at a time, pushing it down with a palette knife to flatten add more in the pan if space
    • Cook till golden brown and turn over till golden on both sides
    • Serve
