Tuscan Bean Soup

Tuscan Bean Soup
Summary:

A lovely rustic warming soup, serve with char-grilled bread drizzled with a little olive oil.

Ingredients

To make this Tuscan Bean Soup you will need the following ingredients:
2 tablespoons olive oil
1 onion or 4 shallots -chopped
2 cloves garlic-crushed
8 rashes thick bacon or pancetta -chopped
1 stick celery- chopped
1 potato- peeled chopped
1 tin/400g beans (see above)
2 pints/1 litre stock
1 teaspoon fresh thyme
1 teaspoon fresh oregano
1 teaspoon flat parsley (optional)
Use any mix of tinned drained beans, look for the ones in just water, try borlotti, canalini, black eye, butter bean, haricot or soak dried beans overnight and simmer until tender

Methods

  1. To make the Tuscan Bean Soup:
    • Heat the oil
    • Add the onions cook till soft with no colour
    • Add the bacon and cook for a couple of minutes
    • Stir in garlic and celery
    • Add the potatoes, cook for a minute or so
    • Add the beans and stock
    • Bring to the boil and simmer for 12-15 minutes
    • Stir in the fresh chopped herbs
    • Check the potatoes are cooked, season and serve
