Ingredients

For this Borrida de Rajada - Spanish Skate Baked with Potatoes Recipe you will need the following ingredients:
750g/1&1/2 lb skate seasoning
1 lemon juice
2 tablespoon olive oil
2 large potatoes
1 medium onion
2 cloves garlic
60g/ 2 oz ground almonds
30g/ 1 oz breadcrumbs
1/2 teaspoon ground cinnamon
1 teaspoon chopped parsley
2 large egg yolks
2 tablespoon milk
pinch saffron

Methods

    • To make this Borrida de Rajada - Spanish Skate Baked with Potatoes Recipe
    • Cut the skate in to portions
    • Marinate the skate in lemon and salt till needed
    • Meanwhile peel and slice the potatoes 1cm thick
    • Fry the potatoes in 1 tablespoon of oil till golden on both sides
    • Place the fish in a 4 portioned ovenproof dish
    • Cover with the potatoes
    • Fry the onion -finely chopped and crushed garlic till soft, add the cinnamon, almonds, saffron, parsley and crumbs
    • Take of the heat, mix in the milk, egg yolks and seaso
    • Spoon on to the potato dish
    • Bake in a preheated oven gas 5/200*c/400*f for 25-35 minutes, till hot and bubbling
    • Serve
