Stuffed Jacket Potatoes with Cheese and Onion

You can add anything to these potatoes, like tuna and sweetcorn, curried chicken, spring onion and salmon - etc. etc. plus you can make a tray up in advance of a party and just wack them in the oven 30 minutes before needed.

Ingredients

To make Stuffed Jacket Potatoes with Cheese and Onion you will need the following ingredients:
4 medium / large potatoes
2 heaped tablespoons Greek yoghurt
1/2 finely chopped onion
30g/ 1 oz grated cheese of choice
Salt and pepper
extra 30g/ 1 oz grated cheese for topping

Methods

  1. To make Stuffed Jacket Potatoes with Cheese and Onion:
    • Cook potatoes in the oven prick just once and place on the top shelf for approx 45 mins, on gas 7 until soft
    • Cut each potato in half
    • Scoop out the flesh place in a bowl with Greek yogurt, chopped onions and grated cheese
    • Season well
    • Scoop the mix back in to the potato ½’s (skins)
    • Sprinkle with a little more cheese (1oz) and bake on a tray for a further 20/ 30 minutes, till golden and melted
    • Serve as a main or a side dish
Preparation time (duration): 10-15 minutes
Cooking time (duration): about 1&1/2 hours
