Ingredients

To make this Carrot Cake Recipe you will need the following ingredients:
150g/ 6 oz carrots-peeled and grated
2 medium whole eggs
100g/ 4 oz light brown sugar
5 tablespoons sunflower oil
100g/ 4 oz plain flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
50g/ 2 oz coconut (desiccated - unsweetened)
50g/ 2 oz raisins
Topping -
75g/ 3 oz cream cheese
50g/ 2 oz softened butter
A few drops of vanilla extract
5-6 tablespoons icing sugar

Methods

    • To make this Carrot Cake Recipe mix all the ingredients together until well incorporated
    • Spoon in to a greased tin
    • Bake in a preheated oven gas 6/210*c/420*f for 40-50 minutes or until cooked
    • Cool
    • For the topping simply beat everything together and spread on the top Recommended cake tin- approx. size 7 inch or 2 lb loaf tin
