Ingredients

To make this Lemon Tea Cake Recipe you will need the following ingredients:
120g/ 4 oz butter -softened
60g/ 2 oz caster sugar
2 medium eggs
3 tablespoons lemon curd
2 fresh lemons -zest and juice
180g/ 6 oz self raising flour

Methods

    • To make this Lemon Tea Cake Recipe
    • Beat together the butter and sugar, till soft and well incorporated
    • Slowly add the beaten egg, beating all the time
    • Fold in the flour
    • Add the lemon, zest, curd and juice
    • Spoon in to a greased loaf tin
    • Bake in a preheated oven gas 3/170*c for 35-40 minutes or until cooked
    • Recommended cake tin- approx. size 2lb loaf tin or 6 – 7 inch
  1. Optional -
    • Ice the top when cooled with 90g/3oz icing sugar beaten together with 1 tablespoon fresh lemon juice
