Summary:

A Basic Muffins fool proof recipe. Try lemon curd ones with 1 tablespoon added to the mix and 1 teaspoon in the middle of each one or try strawberry jam, or add 2 teaspoons of a suitable spice or 175g/7oz sultanas or dried fruits, try chocolate chip, or chopped white chocolate and fresh raspberry. My favourite fresh blueberry and cinnamon.

Ingredients

For Basic Muffins you will need the following ingredients:
375g/16 oz/1lb self raising flour
90g/ 3 oz soft butter
220g/ 9 oz caster sugar
310 ml butter milk (or full fat milk)
1 medium - large whole egg

Methods

  1. For a Basic Muffins Recipe
    • Grease muffin tins- or make ready cases
    • Sift flour, rub in butter
    • Stir in the sugar, buttermilk and the egg
    • Spoon into the cases
    • Bake in a medium oven for 20 minutes
Preparation time (duration): 15-20 minutes
Cooking time (duration): 20 minutes
Number of servings (yield): Makes 10 - 12 medium or 6-8 large
