Perfect for a Vegetarian main course - mushrooms are robust in texture and the filling flavoursome. Try serving with a tomato salsa and a herby salad. Make your own breadcrumbs by processing stale bread and reserve excess in the freezer till needed.

Ingredients

To make our wonderful Stuffed Mushrooms recipe you will need the following ingredients:
4 open cup large field mushrooms
For the stuffing -
Mix 1/4 red pepper -finely diced
1 stalk celery -finely diced
2 cloves garlic -crushed
1/4 onion -finely diced
Spices and fresh herbs (optional)
60g/2 oz breadcrumbs
1 medium egg
60g/ 2 oz grated cheese

Methods

  1. To make the Stuffed Mushrooms:
    • Sauté stuffing mix ingredients for a few minutes until soft, you could add spices and herbs
    • Cool the mixture then add the breadcrumbs and egg
    • Season well and spoon equal quantities on to the mushrooms in an ovenproof dish
    • Top with cheese
    • Bake in a medium oven for 30 minutes

Cooking time (duration): 30 minutes
Number of servings (yield): Serves 4 starter or 2 as a main
