Lime and Champagne Sorbet

Ingredients

To make this Lime and Champagne Sorbet you will need the following ingredients:
10 oz/280g caster sugar
1/2 pint/ 10 fl oz champagne. (you’ll have to drink the rest – shame!)
6 limes zested and juiced
2 egg whites
1 teaspoon caster sugar

Methods

    • To make this Lime and Champagne Sorbet
    • Bring the champagne and sugar to a boil & boil for 2 minutes
    • Add the zest
    • Simmer for 5-6 minutes – and then cool
    • Add the juice
    • Whip up the egg whites with caster sugar- till firm
    • Fold in to the champagne and lime syrup
    • Freeze in an ice-cream machine or in the freezer- stirring every 20-30 minutes –till soft set
    • Ready in approximately 2-3 hours
    • Serve as a decadent pre dessert or pre main course to refresh the palate
