Another Recipe from down-under and submitted by a member. Kangaroo is a lovely meat, I’d love to see it more in England, and these Sausages combine traditional Aussie Meat with the BBQ.

Ingredients

To make this Kangaroo Sausage recipe you will need the following ingredients:
1 finely diced white onion
1 clove crushed garlic
2 teaspoons dark soy sauce
2 teaspoon tomato puree
1 teaspoon course grain mustard
1/2 teaspoon chilli powder
2 teaspoon dark brown sugar
2 teaspoons red wine vinegar
1 teaspoon ground ginger
500g kangaroo or lamb
60g fresh breadcrumbs
1/3 teaspoon salt
15 twists black pepper

Methods

  1. To make Australian Style Kangaroo Sausages (but you can use lamb) with BBQ Marinade
    • Bring to the boil the onion, garlic, soy, puree, mustard, chilli, sugar, ginger and vinegar
    • Simmer for 1-2 minutes and cool
    • Mix into the meat
    • Add all else and leave to infuse the flavour for at least 20 minutes or overnight
    • Stuff into soaked sausage skins- see chocolate sausages
Preparation time (duration): 1 hour +
Cooking time (duration): 10 - 15 minutes
