This recipe is great served the American way with heaps of mashed potato and plenty of sweetcorn along with a ladle of thick meaty gravy.

Ingredients

To make this American Meatloaf recipe you will need the following ingredients:
1 tablespoon olive oil
1 red onion finely chopped
2 crushed cloves garlic
½ teaspoon paprika
¼ teaspoon cumin
¼ teaspoon ginger
1 tablespoon fresh chopped oregano
1 lb minced beef (460g)
1 whole egg
2 oz/60g fresh crumbs
1 tablespoon tomato puree (optional)
8 -10 streaky bacon rashers

Methods

  1. To make American Meatloaf
    • Sauté onions in the oil until soft 
    • Add the garlic and spices and cook for a minute to release the flavour
    • Cool the mix
    • Place in a large bowl and add the fresh oregano
    • Add to minced beef , add 1 whole egg, fresh crumbs and tomato puree (optional)
    • Mix well and generously season
    • Line a loaf tin with the streaky bacon, push in the mixture, fold over excess bacon
    • Cook in a preheated oven gas 6 / 200*c on a medium shelf for approx 1 hour or until cooked in the middle
Preparation time (duration): 15 - 20 minutes
Cooking time (duration): 1 hour
Number of servings (yield): Makes a 6 portion loaf tin
