Ingredients

To make this Fruity Pineapple Cake Recipe you will need the following ingredients:
150g/6 oz light brown sugar
100g/ 4 oz raisins
100g/ 4 oz currants
100g/ 4 oz choppedglace cherries
50g/ 2 oz mixed peel
150g/6 oz chopped pineapple- fresh or tinned
180-200 ml pineapple juice
2 large eggs
200g/ 8 oz self raising flour
1 teaspoon cinnamon
1/2 teaspoon ground ginger

Methods

    • To make this Fruity Pineapple Cake Recipe
    • In a saucepan add the sugar, fruits, pineapple and juice
    • Bring to the boil, then simmer for 8-9 minutes. cool
    • Beat in the 2 eggs
    • Stir in the sieved flour and spices
    • Pour in to a greased tin (8-9 inch)
    • Bake in a preheated oven gas 3/160*c/325*f - for 1&1/2 hours -or until cooked
