Summary:

A really quick, almost a cheats Truffle Cake. Try adding liqueur like Creme de menth to the chocolate filling or Espresso or Orange juice and a measure of Drambuie.

Ingredients

To make the Truffe au Chocolat you will need the following ingredients:
1 sheet chocolate sponge (genoise)
80 ml/2 floz dark rum
80 ml/2 floz stock syrup
550 ml/ 1 pint whipping cream
300g dark 70% cocoa chocolate

Methods

  1. To make the Truffe au Chocolat:
    • Cut the sponge the size of a suitable dish/tin
    • Mix the stock syrup (boiled water and sugar-cooled) with the rum
    • Brush on to the sponge base
    • Whip up the cream
    • Meanwhile melt the chocolate
    • Add both together gently as not to loose air/lightness
    • Spoon on to the base, smooth of the top
    • Dust with cocoa
    • Set in the fridge-till needed
    • Cut with a clean warmed knife
