Ingredients

To make the Amaretti Espresso Cups you will need the following ingredients:
12 Amaretto biscuits
100 ml/ 4fl oz espresso coffee
2 teaspoons caster sugar
2 tablespoons Amaretto liqueur
1 tub/250g Mascarpone cheese
75g/ 3 oz caster sugar
280-300 ml double cream

Methods

  1. To make Amaretti Espresso Cups
    • Crush the biscuits, roughly and divide between 4 tea cups or glasses
    • Stir together the coffee, the 1st of the sugar and Amaretto
    • Pour over the biscuits in the cups
    • Beat the Mascaponi with the 2nd sugar and cream
    • Spoon on top of the cups
