Summary:

A Sabayon is a lightly aerated foam similar to Zabaglione, making the perfect dessert after a heavy meal. Try it with pears but it also works well with exotic fruits.

Ingredients

In order to make this delightful Sabayon you will need the following ingredients:
4 egg yolks
75 g caster sugar
150 ml dry white wine
4 apples
60 ml white wine
A touch of vanilla or a vanilla pod

Methods

  1. To make this Apple Sabayon recipe:
    • Whisk the egg yolks and sugar over a Bain Marie (place in a bowl over a pan of simmering water) .
    • Whisk constantly until the egg mix is pale, frothy and increased in size.
    • Pour the wine in a steady stream whisking all the time, until all the wine has gone and the sabayon is light and aerated.
    • For the Apple part - simply poach 4 peeled, cored, quartered apples until just cooked in a little white wine and vanilla.
    • Tip - you can use the poaching liquid to make the sabayon.
    • Divide the apples between 4 heat resistant bowls or plates and simply ladle the sauce over the apples and grill until light brown bubbling circles appear on the dish.
