This Asian influenced salad is light and zesty with a bit of a bite great as a side dish with Asian starters like Thai fish cakes or skewers, or use to pep up simple steamed fish and chicken dishes.

Ingredients

To make the Coriander Salad you will need the following ingredients:
1/2 bag rocket
1/2 bunch coriander leaves - chopped
1/2 yellow pepper - very thinly sliced
1/2 red chilli - very thinly sliced
1/2 tablespoon sunflower oil
1/2 tablespoon lime juice
A pinch of seasoning

Methods

  1.  To make this great Asian Salad :
    • Simply toss all the ingredients together and serve with cookeryclubs stuffed chicken or prawn skewers.
