Ingredients

 In order to make this Warm Potato Salad you will need the following ingredients:
500 g new potatoes
250 g aspargus spears - chopped into 3 cm pieces
1 teaspoon olive oil
100 g butchers smoked bacon - diced
1 small red onion - thinly sliced
1 bag rocket or red chard - washed
Seasoning
Extras - add 2 teaspoons balsamic vinegar

Methods

  1. In order to make this Warm Potato Salad Recipe:
    • Steam the potatoes for 15 minutes, slice in chunks or half.
    • Steam or boil the asparagus for 3 - 4 minutes, cut in to 3 cm lengths.
    • Meanwhile heat the oil in a frying pan and cook the bacon until crispy.
    • Cool, only very slightly.
    • Toss all the ingredients together including some of the fat released from the bacon.
    • Season to taste.
    • The trick is to get everything cooked at the same time.

Cooking time (duration): 15 minutes
Number of servings (yield): Serves 4 as a starter or 6 - 7 as a side
