600g pears, peeled, cored and cut into eighths
50ml pear concentrate or honey
200g dark chocolate
200ml double cream
200g chocolate chip biscuits, crushed

    • Cook the pears in the pear concentrate or honey
    • Melt the chocolate in a bowl over a pan of hot (but not boiling) water
    • Whip the cream Mix the pears, chocolate, biscuits and most of the cream
    • Put the mixture into lightly oiled ramekin dishes, and chill in the fridge
    • Top with spoonfuls of cream and the remaining caramelised pears.
