Ingredients

To make this African Spiced Chicken and Peanut Soup you will need the following ingredients:
1 tablespoon vegetable oil
1 large sweet potato- diced
70-80g raw diced chicken
1 onion, chopped
2 cloves crushed garlic
2 teaspoon cumin
1/2 red pepper- finely chopped
1/2 red chilli pepper- finely diced
1 teaspoon Tabasco or other chilli sauce
1 pint chicken stock (or use 1 cube)
1 can black eyed beans-drained and washed
2-3 tablespoons peanut butter seasoning

Methods

  1. To make African Spiced Chicken and Peanut Soup
    • Heat up the oil and fry off the chicken, without colour for a minute
    • Add the sweet potatoes, onion, garlic, pepper, chilli and cumin, stirring until soft without colour - approx 5 minutes
    • Add the chilli sauce, cumin, chicken stock and black beans; simmer for about 25-30 minutes
    • Add the peanut butter, season and serve
