Rum, Raisin and Almond Cake - Gluten Free Recipe

The ground almonds make this Rum, Raisin and Almond Cake - Gluten Free Recipe moist and with the rum and raisins your in for a treat, of course you could replace the almonds with ground hazelnuts or the raisins with dried blueberries or replace the rum with sherry. To make this Rum, Raisin and Almond Cake - Gluten Free Recipe you will need the following ingredients:
200 g raisins
200 ml dark rum*
250 g / packet butter - softened
250 g light brown sugar (or caster)
4 eggs medium - beaten
200 g ground almonds
100 g rice or gluten free plain flour
100 g polenta / corn meal
20 g baking powder
Cake tin size - 20 - 22 cm / 8 - 9 inch spring bottom cake tin round or square or near equivalent


  1. To make this Rum, Raisin and Almond Cake - Gluten Free Recipe:
    • Soak the raisins in the rum for 20 minutes or so
    • Preheat the oven gas 4 / 180*c
    • Beat the butter and sugar together until light and paler in colour
    • Add the eggs slowly, beating all the time until all the eggs have gone and the mixture is smooth
    • Stir in the rest of the ingredients including the rum and raisins
    • Spoon in to a greased tin and bake for 45 minutes or until cooked
  2. Top tip - To ensure a cake is cooked in the middle, insert a knife or a skewer in to the centre and if the skewer comes out clean then the cake is cooked.
