My mum used to serve this Garlic Quail Recipe at her restaurant the Courtyard in Oulton Broad, I remember experimenting with them - stuffing some with sausage meat and roasting for 50 - 60 minutes or spatch cocking them, by cutting down the back and spreading out ready for the grill and some I de-boned and rolled filling with chestnut stuffing for a Christmas starter.

Ingredients

To make this Garlic Quail Recipe you need
Marinade -
4 cloves garlic- crushed
1 tablespoon fresh rosemary leaves - chopped
1 lemon - zest only
1 lime - zest only
4 quails
seasoning
Variations - Try replacing the rosemary with thyme or oregano. If you use dried use half as much

Methods

    • To make this Garlic Quail Recipe
    • Mix all the ingredients for the marinade together and pour over the quail, leave for 20 minutes or preferably over night
    • Season the quail well and roast or B.B.Q in a hooded barbecue for 40 - 50 minutes or until cooked(Don’t serve pink - quail needs to be well cooked)
