I like banana and cranberry at Christmas time, raisin in spring, prunes in winter, dates in autumn and sour cherries in summer. But you could always use a mix to make these Banana, Dried Fruit and White Chocolate Muffins

Ingredients

To make Banana, Dried, Fruit and White Chocolate Muffins you will need the following ingredients:
1 egg – medium or large
125 ml any milk
50g / 2 oz butter – melted
50g / 2 oz caster sugar or try light brown sugar
150g / 5 oz plain flour – sieved
1 heaped teaspoon baking powder
50g / 2 oz dried fruit i.e. – cherries, moji, cranberries, raisins etc.
50g / 2 oz white chocolate – chips or chopped
1 banana – lightly mashed with a fork

Methods

  1. To make these Banana, Dried Fruit and White Chocolate Muffins
    • Preheat an oven gas 6 / 220*c / 430*f
    • Mix the egg, milk, melted butter and sugar together in a large bowl
    • Mix in the flour, lightly, until only just mixed
    • Stir in the fruit, chocolate and banana – again don’t over mix
    • Spoon in to muffin cases / tin 2/3 full, approx. 10 -12
    • Bake for 20 minutes or until cooked
