Ingredients

To make this Dukkah Rub - Spice Mix Recipe you will need the following ingredients:
30 g / 2 tablespoons hazelnuts
30 g / 2 tablespoons sesame seeds
1/2 tablespoon cumin seeds
1/2 tablespoon corriander seeds
tip teaspoon black pepper
A tip of a teaspoon of salt
Variations - Add 1 teaspoon freshly chopped thyme.

Methods

    • To make this Dukkah Rub - Spice Mix Recipe
    • Roast the hazelnuts on a baking sheet gas 4 / 170*c for 10 minutes or until golden
    • Rub them in a clean t-towel to release the skins, discard and set aside the peeled nuts
    • Meanwhile toast or grill the sesame seeds until light golden brown
    • Dry fry the seeds for a few seconds to release the flavour
    • Grind all the ingredients together
