Ingredients

To make this Medieval Grilled Quail Recipe you will need the following ingredients:
1 quail per person
15 g melted butter per person
Salt
Pepper
1/2 teaspoon lavender or lemon thyme per person - finely chopped

Methods

    • To make this Medieval Grilled Quail Recipe
    • Split the bird down the middle from the head cavity cutting right down the back, cutting the bonier piece down threw the middle to the back cavity
    • Pull the quail back / push down / flatten – so you end up with a flat piece of bone on bird
    • Brush with the butter
    • Rub salt, pepper and finely chopped herb all over the bird
    • Grillslowly on both sides till golden, crisp and cooked
