This Moroccan Boned Leg of Lamb Recipe  is gorgeous on the B.B.Q and served with chargrill Mediterranean vegetables and a blob of Greek yogurt mixed with garlic, mint and cucumber dices. I tend to use whole spices - like seeds and pods for my cooking and grind them in a pestle and mortar but ground are fine.

Ingredients

To make this Moroccan Boned Leg of Lamb Recipe you will need the following ingredients:
Spice Marinade -
2 tablespoons olive oil
1 tablespoon cumin seeds - ground
1 tablespoon coriander seeds - ground
1 teaspoon paprika
1 teaspoon cinnamon
1 clove garlic - crushed
1/4 teaspoon salt
5 - 8 twists black pepper or a good pinch
1 leg of lamb - boned out ( approx. 5 - 6 lb. / 2 & 1/2 - 3 kg)

Methods

    • To make this Moroccan Boned Leg of Lamb Recipe
    • To make the spice marinade simply mix all the ingredients together
    • Rub in to the lamb, as if your massaging someone really nice
    • Leave to marinade for 30 minutes minimum or preferably overnight
    • Bake in a preheated oven gas 7 / 210*c / 420* f for 3/4 - 1 hour depending on how you like it or
    • B.B.Q for 20 - 30 minutes on both sides or until cooked to your liking
