I made these Banana Pancake Bites for a demo for the Joy of Food, a fantastic project to bring cooking skills to the community. If you fancy something sweet and not too fattening with an injection of healthiness, you can make this recipe with simple store cupboard ingredients in less than 15 minutes start to finish.

Ingredients

To make these Banana Pancake Bites you will need the following ingredients:
200 g / 8 oz plain or wholemeal flour – sieved
1 teaspoon baking powder
3 – 4 heaped teaspoons sugar – caster or light brown
1 teaspoon lemon juice – fresh or bottled (optional)
2 small or 1 large egg
enough milk to make a thick batter (100 – 120 ml)
1 firm banana – small diced
Oil to fry

Methods

  1. To make the Banana Pancake Bites - Joy of food
    • Simply whisk all the ingredients, except the banana together with enough milk to make a thick batter the consistency of thick whipped cream
    • Stir in the banana
    • Drop tablespoonfuls into a hot frying pan greased with oil
    • Cook on both sides until golden
  2. Variations –
    • Add 2 tablespoons of raisins, sesame seeds or chopped walnuts

Cooking time (duration): 4 minutes a go
