Ingredients

To make this Mixed Vegetable Spices Pilau Rice Recipe you will need the following ingredients:
2 cups basmati rice
1/2 cup Moong dal
1 medium carrot
2 medium potatoes
1/2 aubergine
2 medium tomatoes
1 tsp turmeric powder
3 tsp salt
3/4 cup frozen peas
3 tsp heaped ginger
2 tsp heaped garlic
3 tsp corriander/ cumin mix
3/4 tbs ghee (clarified butter)
2/3tsp chilli powder
1 medium onion
2 tsp garam masala
2 tsp cumin seeds
1 tsp mustard seeds
2 whole red chillies

Methods

    • To make this Mixed Vegetable Spices Pilau Rice Recipe
    • Wash and soak rice/dal for 15 to 20 mins
    • Wash and chop all the vegetables in big chunks onion should be chopped in big chunks
    • In a big heavy based cooking pot add ghee, when hot add 2 whole red chillies, when chillies changes colour, add cummin and mustard seed
    • When mustard seeds start popping and cumin seeds become darker add onions and cook for 2 mins •Add all the vegetables, and all the spices and cook for 3 mins
    • Add rice and dal and stir gently, as the rice was washed and soaked it breaks easily
    • Add 4 cups of hot water and cook on medium heat
    • Leave the pot open
    • When water level is in level with the cooked rice/vegetables put the lid on and cook it on very low heat for 20min
    • DO NOT OPEN THE LID
    • Switch off the cooker and leave it for 10 to 15 minutes before serving
    • Serve with Yoghurt rita, and papadum
